It’s a Labour Day Affair – Pancake

Pancake is one of my go to item foe breakfast. So it’s Labor day  and all workers all around Nigeria are taking a mini holiday. I have nieces who came over for a sleep over so breakfast  has to be something easy for them to manage on their own, whilst they shuttle between checking twitter, Facebook etc,. I made the batter overnight and got them to fry off as they wish. I needed sometime on my own to catch with some reading.
It’s amazing how much we need time savers in today’s world . More women are  looking for easy recipes . Recently one of the fans on my Facebook page specifically asked for a pancake recipe, something easy to rustle up for the children in the morning, she says. The beauty of pancake is that you can prepare your batter and keep in the fridge overnight , hopefully you have electricity:)
Children will love you for it. I topped the cakes with a little spread of peanut butter and it was yummy, at least that’s what my niece Coco-Mma  told me.
So it’s Mayday and a great opportunity for something other than “bread and tea”, go for your pancake. Much love and chao chao!

Recipe for plain Pancake? (about 8 medium sized cakes)
11/4cups Flour
2 tbsps melted butter
1/4 cup sugar
3/4 cup milk
2 Eggs
1/4tsp baking powder
1teaspoon vanilla essence( optional)
2 pinch greated Cinnamon
Pinch of salt

Method
1, Sieve the flour,baking powder , salt and cinnamon into a bowl
2, Melt butter, beat the egg and mix these and sugar and vanilla into the milk
3 ,Pour the dry ingredients into the liquid and whisk or put in a batter container and shake.

4, Brush the frying pan with very little oil and fry till brown on both sides
