Beans pottage and school days
Looking back at those weevil infested beans meals in school, you will never think that some one like me will ever eat beans again in my life time.I hated beans days in school and so did many teenagers. Was it the weevil or was it the discomfort of farting through out the rest of the day after the meal that made us cringe at at the thought of beans? I will never know. The school cooks also made it a point of duty to make it as tasteless as possible. Was it their sheer lack of cooking skills or just that they felt the students did not deserve anything better? Again I will never know.
Yes I return to beans today with lots of excitement different from my school days. Today’s offering is interesting and certainly worth trying.
You will notice that there is no oil in the recipe. yes oil is coming from the coconut milk and the bacon.
This lunch idea is not your typical beans pottage. Enjoy!
Recipe( Serves 4)
Ingredient
11/2 cups Beans
8 pieces Irish Potato
4 Beef sausages
4 strips Bacon (optional)
2 cooking spoon Tomato/ Pepper blend
2 cooking spoons diced Carrots
1 whole Onion( chopped)
4 cups Coconut milk
Chicken seasoning to taste
Salt to taste
Method
1, Grate coconut flesh and squeeze out the milk and set side. Squeeze more milk than the recipe calls for as some beans are harder and you may need more liquid to get the beans very soft.
2,Wash the beans and pour into the coconut milk, add the tomato/pepper mix, onion, seasoning and cook till very soft .
3, Half way through cooking the beans, add the peeled and washed potatoes and the bacon .Taste and correct seasoning .
I f you are using bacon avoid adding salt to the dish until you have tasted ,as bacon comes with quite some salt.
4, Cook pottage till potato and beans are soft
5, Add the sausage and carrots and cook for 3 minutes
6, Serve hot .
