Spicy Snails in Garlic Sauce

It was a hectic week at work.There were deadlines to meet, briefs to write and presentations to be made etc. such that by the end of the week I was thoroughly exhausted and really feeling bleh
I managed to resume at the gym after 2 weeks of inconsistency and my body revolted to the lack of exercises as expected.  The signals my body usually gives for me to run back to the gym is when I cannot run up two flights of stairs without panting like I have come out of a boxing ring. After two days in the gym I was already feeling better. I have promised my self not to slack off on my exercise routines any time soon.
Food wise, I was doing lots of green smoothies  laced with almonds for most of my breakfast which was quite filling. I even noticed some improvements in my skin tone.
I was craving snails all week and so by Friday night, I decided to treat myself to some snails.  Initially I planned for grilled pepper snails but I was too exhausted to do that so I settled for Spicy Snails in Garlic sauce
Today’s offering  takes snails  out of the familiar  snail stew or peppered snails to something you may find on a fine dining menu. This dish can work as a starter or just a light meal.

Recipe( serves 4)
4 pieces Snails( washed)
2 Yellow peppers or more ( Cameroon type)
4 lobes of garlic
1 medium size Onion
Chicken seasoning to taste
2 table spoons Butter

Method
1, Rinse snails to remove every trace of slime.Season with some onion, pieces of chopped pepper, salt and seasoning.Add a little water and steam for 15 minutes. Allow to cool and cut into smaller pieces
2, Pound the garlic and pepper into a coarse paste and set aside
3, Melt butter and fry finely chopped onion and the pounded garlic/pepper for about 2 minutes stirring all through. Remove some of the onion/ pepper and set side
4, Add the snail pieces into the butter sauce , a little seasoning to taste with 1 cooking spoon stock from the steamed  snails. Cook the snail pieces for 1-2 minutes stirring  at intervals until the stock dries up . Correct seasoning and voila the snails are ready
5, To serve, spoon the snails into small bowls, spoon on the onion pepper sauce and serve with bread. A glass of white wine was a good accompaniment to my snails.
