Curry Beans with Sweet Potatoes

Primary school  days and the the dislike for beans…why do kids dislike beans even when we tell them that beans makes them grow tall….Many hunger strikes were embarked on whenever beans appeared on the menu . Is it the flatulence it brought on or is it that the food vendors did not cook tasty versions? I guess I should just get some kids around and ask these questions. Whatever it is, beans is sure good for us. Some people say you should drink plenty of water after a beans meal  and the ” gas flaring” will diminish. Some others advise to sprinkle dry garri on the pottage and the gas is not so bad. Well for me it just makes sense to eat a beans meal way before bed time to reduce the discomfort of gas and indigestion.
Beans and its benefit as a good protein source is not in question. The regular Nigerian Beans pottage comes with palm oil, and I must say quite tasty… Is there really anything made with palm oil that is not tasty?
The idea for this version  is to have a different variety to your regular beans pottage .
Sweet potato paired with the Curry beans is an interesting twist . Of course  you may want to replace the sweet potato for yam or plantain , I trust it will be as interesting. Enjoy

Recipe
1 cup brown beans
1 cooking spoon blended tomatoes
1 teaspoon ground pepper or quantity to taste
1/2 medium size Onion( chopped)
2 cooking spoons vegetable oil
1 table spoon Curry powder
Chicken seasoning to taste
Salt to taste
11/2 bottles of 60 cl water
2 sticks carrot ( chopped)
Small size Sweet potatoes (peeled and cubed)

Method
1, Pour water, tomatoes, pepper, onion ,oil, seasoning, curry powder and beans into a pot and cook till almost soft
2, Add the sweet potato  and cook till soft. Taste for seasoning.
3, Add carrots when potato is almost cooked and cook for just 3 minutes depending on the size of carrots.
4, Serve warm.

Cooking tip: Using wooden spoon to stir the pottage prevents the beans and sweet potatoes  from becoming too mushy.
