Dodo Wengele

Eko Wengele , Dodo Wengele ……good   rhyme  for a musical lyric. No I am not a musician but sure love good music. Just sharing where the inspiration for the name came from.Why did I name this dish Dodo Wengele , it’s just the way the veggies and fish and even the egg sets in reckless abandon as you look through the triangular pieces. I had tried the recipe sometime ago but it did not hold well together . I shared with a friend who herself is a great cook and she suggested I use a little bit of corn flour to the whisked egg and that did it.
Most of the ingredients you need for this recipe are down at your neighborhood market. This is one dish you can play around with colours of vegetables depending on what you have.
I found also that non stick frying pan is best for this recipe as the pie comes off the pan very easily. Poking the centre of the pie  with a wooden skewer helps the heat to spread through the center of the pie and cook the eggs well.
Let me warn that Saturday breakfast will not be the same again in your house if this dish appears on the menu. Dodo Wengele…..enjoy!

Recipe for Dodo Wengele 

Ingredients (serves 4 people)
3 Plantains
4 large Eggs
1/2 Green, Yellow, Red and Orange Bell peppers( cut in rings)
1, small size Onion ( cut in rings)
Few Ugwu leaves
1/2 cup fried Fish (shreds)
1 level teaspoon Corn flour
Scotch Bonnet Pepper to taste
3 table spoons Vegetable oil
Half teaspoon Mixed Herbs & Spice
1/2 tablet Chicken seasoning
Salt to taste

Method

  • Wash , peel and slice plantains into rectangles and fry till golden brown.
  • Coat the base of the frying pan with little oil and place some of the dodo at the base.
  • Layer on pieces of the vegetables , scotch bonnet pepper  and the fish.Sprinkle on the mixed herbs and spices.
  • Place on top of that another layer of Dodo.
  • Finish off withe the remaining vegetables and fish.
  • Beat the egg, add the seasoning, salt ,  oil and the mixed herbs and spices.
  • Make a paste with  corn starch in little water and add to the egg mixture and beat well.
  • Pour the egg mixture over the arranged product.
  • Put the pot on medium heat to cook for about 10 minutes . Cover the frying pan for about 3 minutes to help cook the vegetables before turning into the big frying pan.
  • If you are using a nonstick pot you can shake the pot to loosen the food off the pot as you cook.
  • Get a bigger frying pan ready. Place the bigger pan over the smaller one and turn over the product into the bigger pan such that the side that faced up in the small frying pan is now face down in the bigger pan. This is to help cook the eggs well, else the egg in the middle might not be cooked.
  • Continue to poke the product in the middle and allow to cook for about 10 minutes.
  • Slice into triangles and serve  hot.
