Fish in veggie sauce on Couscous bed

I had always seen couscous in Nigerian shops and markets but  have not considered cooking it at home until now. Did you know that in just 3- 8 minutes your couscous is ready? Talk of a busy woman’s must have food in the pantry. Preparing Couscous is just like making eba. Having the busy woman in mind  I have come up with this simple dish which can be rustled up in just minutes . I picked up most of the ingredients from the mallams selling veggies in Lagos “go slow”
You know  those times when you  don’t have time to  cook anything complex  but still want something really delicious. This is the dish to cook.
I decided to make the couscous even more exciting by adding chicken seasoning, frying with little olive oil and garnishing with black currant.

P.S: In the spirit of discovery, I also found this interesting Ankara skirt from Ituen Basi a renowned Nigerian Fashion designer and I absolutely love it.

Recipe
4 pieces Croaker Fish fillet
1 medium size Onion
2 pieces fresh Pepper
2 pieces Tomato
1/2 medium size Green Pepper
1/2 Yellow Peppers ( optional )
1/2 teaspoon Suya spice
Pinch ginger powder
1/2 teaspoon ginger/ garlic seasoning

Method ( Fish sauce )
1,Season the fish with Suya spice, seasoning and a pinch ginger powder
2, Allow fish to marinade for 15 minutes
3, Heat very little vegetable oil and fry the fish, browning on both sides and set aside
4, Fry the onion, fresh pepper, tomato and the green pepper.
5, Add the little liquid from marinating the fish
6, Return the fish gently into the frying vegetables and cook for just 3 minutes
7, Serve with the couscous

Method ( Coucous )
Place 1 cup Coucous in a bowl and  sprinkle  in a little chicken seasoning .Pour on 1 cup boiling water into the couscous and allow to stand for about 3minutes. Using a fork scatter the couscous. Add 1 table spoon olive oil and spread to prevent sticking. Heat frying pan and add 1 tablespoon olive oil .Pour couscous into frying pan using a fork to spread  evenly for about 3 minutes .This frying gives the couscous a crisp and soft texture at the same time. Add 2 table spoons currants and mix. Serve warm.
