GizMosa Nigerian Small Chop Recipe

Gizdodo just came into Nigerian food menu in the past five years. This small chop dish is basically dodo and gizzard  mixed  in stew sauce? Owambe parties Lagos and the surrounding south west towns now have Gizdodo on the small chop menu list. So I have basically deconstructed gizdodo or gizdo and made finger foods out of it using Mosa,a plantain based dish but instead of frying, I baked it. Enjoy my fresh twist to this familiar dish.

Recipe  for Mosa bake (serves 4)
2 ripe Plantains
1 Egg
1 table spoon baking wheat Flour
1/2 cup water for blending plantain
2 cooking spoons Olive oil or any vegetable oil
1 teaspoon Ginger powder
1/2 teaspoon ground dry Pepper
Seasoning to taste

Method
1, Heat up the oven
2, Wash, peel and blend the Plantain with ginger, dry pepper and water
3, Pour plantain paste into a bowl, mix in the flour, oil , whisked egg, seasoning and salt to taste
4, Oil the flan pan  and pour in the plantain paste and bake for 25 – 30 minutes. To test if Mosa is baked, pierce the centre of the Mosa with a knife , if it comes out clean, it is baked.
5,Allow to cool, and carefully get it out of the pan and place on a plate.

Recipe for Gizzard sauce
2 cups Gizzard pieces
1/2 onion( chopped)
3 cooking spoons Tomato/ Pepper blend
1/2 medium size Green bell Pepper(cubed)
1/2 medium Size Red bell Pepper(cubed)
1 teaspoon white pepper
Pinch Thyme
3 cooking spoons Olive oil
Chicken seasoning to taste
Salt to taste

Method
1, Cut the gizzard into small pieces, season with chilli pepper, white pepper, onion chicken seasoning and salt. And steam till cooked and the water dries up
2, Add one cooking spoon of oil to  the gizzard pot and fry up the meat till light brown
3, Heat remaining oil in a separate pot and fry onion, and the tomato/ pepper blend, add thyme, seasoning, and salt to taste. Fry the sauce till very dry.
4, Add the bell peppers  and cook for 2 minutes.
5, Lastly pour the fried gizzard into the stew and mix
6, Spread the gizzard sauce onto the Mosa , cut into desired shapes and serve.

  • Just attempted the Gizmosa I can’t thank you enough.I doubled the recipe to serve more people. I also noticed that using the flour quantity in the recipe my mix was rather runny so I had to add more flour until it was firm.. It came out wonderfully anyway thank you.

  • Is the baking wheat flour the same as plain flour or self raising flour? I’m asking because I have plain flour and need to know if I can use that. Also, can I use fresh ginger if I don’t have ground dried one?

  • I made this today, my husband loved it! The only thing is that it wasn’t as flat as yours, maybe because my pan isn’t too wide. One question, can it be refrigerated or left out?
