How to make Afiame soup

Afiame soup or beans soup is a soup I will cook over and over again because its simple and the ingredients are readily available. Sometimes the simplest of ingredients just result in some tasty soup that you wonder why you did not think of this. Beans soup is one of such simple but tasty soups. I am bringing to you an adaptation of a soup called Afiame from northern part of Edo state . My twist is the addition of a little bitter leaf to bring that rounded taste that we all want in a soup.
To reduce cooking time you can  roast and grind your beans way ahead and leave in the fridge.
I had washed and oven roasted and ground the beans during the week, so I was only putting together the soup in 30 minutes when I decided to cook. I am sure you will be saying this quick? Sure  and the result  of Afiame soup blew me away.

Recipe for Afiame soup

1  medium size whole smoked Fish
2 pieces stock Fish
Handful smoked prawns
2 table spoons roasted Beans powder
1 tea spoon dried Pepper
2 chopped fresh pepper
1 table spoon  chopped Effirin/ Nchawun/ Ntong
1 tea spoon washed Bitter leaf
1 table spoon Crayfish powder
1 crayfish seasoing
2 pieces Uda
1 cooking spoon Palm oil
60 cl water

Method
1, Steam fish, prawn,stock fish, Uda,  peppers , crayfish powder, seasoning and salt for about 10 minutes
2, Add oil and bitter leaf and cook for 5 minutes
3 , Dissolve the bean powder in cold water
4, Reduce heat on the soup pot ,gradually add the bean paste stirring quickly to prevent it from forming lumps.
5, Increase heat and allow soup to thicken for about 8 minutes (consistency will look like ofe Nsala)
6, Add the chopped Effirin and cook for 2 minutes
7, Serve with Eba.

TipRemove seeds from Uda to prevent the bitter flavour in your soup.

    i wanted to know where to buy the roasted bean powder; and can it be substituted with another thickener.

    • Hi,Tutu. The way to get the bean powder is to wash your beans and place it in a baking tray in the oven and allow to dry and ‘cook’ but not brown for about 15 minutes. You can also dry fry this in a frying pan for about 10 mins. After drying in oven ,I first crushed in a motar before grinding in the dried ingredient part of the blender. I made enough for about 3 cookings , so left the balance I used for my recipe post in the fridge for next cooking

  • Uda is pepper soup spice. Usually the traders from the eastern part of Nigeria know it. That is if you happen to shop in Nigeria. I the picture of it on another recipe on this blog,it is Banga soup

  • This seems a bit similar to the Yorubas gbegiri, so I wanted to know if instead of drying out the beans one could cook it the way gbegiri is done and add all the other extra bits, is that possible or have you tried it?

    • Hi, Jumoke. I have not tried out the method you are proposing.Drying the beans gives the soup a different texture to the soup different from the gbegiri one. I will try out your method though. Thank you.

  • It is also a special delicacy in Kogi state especially with the Nupes and Igalas. They serve it with Tuwon rice or pounded yam. We also spice up the soup with uziza seed, curry leaf or African nutmeg to make it more flavourful but most importantly if you don’t have local seasonings like locust beans or a special one we call Okpuye you can also use garlic and ginger.

  • Thanks for this recipe. When you say washed beans do you mean peel the back before roasting? Is the roasting to dry the beans or make it brown?
