How to make Kilishi Potato Salad

My inspiration for Kilishi Potato Salad is from my visit to Chicago. I was in Chicago recently for a marketing summit. Food was great and of course this was where my inspiration came from. Dinner was on a boat cruise that lasted about 3hrs, good food, exotic drinks, good music, sea breeze,dancing and laughter …. It was just a complete moment of relaxation. Like my people will say I was ” chopping life with fork and knife” 🙂

 As I dug my fork into the potato /ham salad , it clicked instantly that I could turn this around and make it truly Nigerian. Pepperless food is not our thing so even in salads we can incorporate pepper. Certainly you can judge from our Fish Pepper soup.
Kilishi Potato salad is one of my exciting 2013 meal creation.

Kilishi is prepared using quality beef. Lean meat is cut into thin sheets.These sheets of meat are sun dried on a raised wooden table covered in rush matting for about four hours. The sheets of meat are then immersed in a slurry of groundnut cake (kuli kuli) seasonings including sugar, salt and pepper.  After immersion, the meat is returned to the rush matting to dry in the sun for a further five to twelve hours. The product is finally roasted briefly over fire. Kilishi is very similar to the Mexican Beef Jerky.

My advise is that when buying kilishi  get it from a source where there is good off take of the product . This way the  likelihood of you getting mouldy ones will be slim.  The last one I got was from Kano airport. I understand that the ones made in Bauchi are the best.
The crunch and well seasoned kilishi combined with the potato , the little fresh shumbo pepper is soooo… unbelievably delicious. Trust me you will have to keep yourself and friends from having 3rd helpings.

Nutritip: Do not skip meals.  Your metabolism can actually slow down, leaving you more prone to store fat by the time the day is through. This meal is a good filler for times you are hungry.

Recipe for Kilishi Potato Salad 

6 medium size Potates( boiled and cubed)
1cup  shredded Kilishi
3 medium size Shombo Pepper (cut in rings)
4 sticks Spring Onion( cut in rings)
1 medium sized diced Green Pepper( optional)
4 dessert spoon Salad cream
2 dessert spoons Tomato ketchup
Pinch Black Pepper

Method
1, Combine potatoes , kilishi, peppers and onion
2, Mix the salad cream, ketchup and black pepper to make the dressing
3, Mix the dressing with the ingredients
4, Serve salad cold as starter or light meal
