I love Saturdays because I can treat myself to some foods I love, like Mackerel Fish Fingers. It’s about 11.30am on a Saturday and I am sitting in my courtyard and reading a book. On my side is a plate of Mackerel Fish Finger with a glass of chapman and some music is wafting in the air from my iPhone. I wish it was a glass of wine though but maybe its rather early to drink. My Morning Glory is flowering and the fragrance of the flower wafts through the air around. What more can a girl ask for as a way to retreat into your self and have some me time. You will be surprised how much you come out of those quiet moments fully relax and energized . By the way I do this quite often.
I make a deliberate effort to have those me moments, just to relax and doing this with some nice food bites is what I can simply say….This is the Life.

Recipe for Mackerel Fish Finger
Ingredients
Batter (1 cup plain flour + 1 egg+200 ml milk)
Whole Mackerel fish (fillet)
Fish seasoning
Salt to taste
1/2 Lemon or Lime
Method
1, Mix ingredients for the batter and set aside for about 10 minutes
2, Fillet the fish and cut into strips , season with salt, fish seasoning and lime juice. Mackerel is a fish I have grown to like despite the strong flavour,because it contains omega-3-oils that is good for the heart. If you don’t like Mackerel fish you can use any other fish of choice.
3, Heat the oil, dip each strip in the batter and fry till golden brown. Ensure the oil is not too hot so the fish can cook through
4, Drain the fried fish on kitchen paper to take out some oil
5, Serve with yogurt dip or any other dip of choice..
How to make Yogurt dip ?
Use 1 tablespoon of creamy yogurt, squeeze some lemon into the yogurt add some chopped Chilli and basil, mix well and use as desired.
