Sweet Corn and Shrimp Baked Pancake

The Internet is awash with all sorts of miracle  diets that will make you look 20 years when you are actually 40 .Some of us at one time or the other have been victims of an all vegetable diet, all protein diet, water therapy, no fat , no carb diet and so on. Whilst these diets may be necessary from to time time, the truth is they are not sustainable . Sometime I imagine our  bodies wondering why we can’t seem to make up our minds on what we want to eat.
With many of us living majorly sedentary lives our rate of calorie burn slows down but we want to eat the same way we want to eat 1500- 2000 calorie with of food if not more. and keep the same weight.
If you are not very mobile and active then reduce portion of fat and carbs on the plate. Increase your vegetable and fruit intake as you get older just to get things moving along the intestinal path. Drink lots of water to help flush bad stuff out of the system easily.
You know what ? just keep things on the moderate level and exercise as much as you can. Enjoy the body you have and treat your self to some sensible food and exercise Portion control helps all the time.

Recipe
1 cup plain Flour
1 whole Egg
200 ml  Milk
1 teaspoon white Pepper
3/4 cup Sweet Corn
1/2 cup chopped Shrimps
1/2 Onion( chopped)
1 cooking spoon Olive Oil
Scotch Bonnet pepper to taste
Seasoning to taste
Salt to taste

Method
1, Make pancake batter by mixing the flour, egg and milk together till well blended
2, Preheat oven to 400 degrees
3, Add the sweet corn, shrimps,onion,white pepper,oil, scotch bonnet pepper , seasoning and salt to taste to the pancake batter. Blend mixture very well.
4, Oil your flan pan well. Pour in the mixture
5, Bake in the oven for about 30 minutes or till the top of the pancake starts to brown slightly.
6, Serve warm with Pepper sauce  if desired.
