Nigerian Beef Suya on Baked Mosa (Suyamosa)

Pizza is increasingly getting popular on Nigerian fast food menu.
I was wondering how to enjoy a similar concept but avoid the pastry and so I played around with familiar foods that combine naturally together, Suya and Boli for example.
This take on using plantain as the base and topping it with some meats and vegetable is an interesting meal that I have come to find quite interesting particularly when eaten hot. I want to call this “Suyamosa  bake”
Sometimes you don’t have to prepare every part of the meal from scratch.In this case I bought the Suya from  University of Suya in Ikeja, Lagos .
I try as much as possible to use natural food items . For example I take my whole wheat to the market and get my flour from the mill and store in the fridge for use. It is all about enjoying the abundance of natural organic foods around us.
Who knows this Nigerian food concept will hit the international culinary scene soon. Here is Suyamosa. enjoy!

Recipe
1 very ripe Plantain
1 Egg
1 tablespoonful  whole Wheat flour
Pinch of ginger
1/2 satchet ginger/ garlic seasoning
6 tablespoons Water
1/2 teaspoon ground dry Pepper
1 table spoon vegetable oil

Method
1, Blend the plantain with water and pepper
2,  Pour paste into a bowl, add the flour, ginger and seasoning
3, Mix well and add the egg and oil.
4, Whisk the mixture well to incorporate air
5, Oil the flan pan and pour in the paste and bake for 15 minutes
6, You will know that the Mosa is cooked when you pierce a knife in the middle of the product and it comes out clean

Preparation of Suya topping
1, Slice 1/2 onion and whole green pepper into strips
2, Heat 2 tablespoons vegetable oil
3, Add one tablespoon Suya pepper and fry, add 1/2 cube of seasoning.
4, Add the onion , green pepper and Suya and fry of 1 minute
5, Add 4 tablespoons of water and mix the topping and cook for just 1 minute
6 , Spread topping on the Mosa bake , cut into triangles and serve hot
