I organized a small get together to celebrate a friend’s promotion at work. It was light, fun filled, lots of laughter filled and interesting things to eat. Not the usual fried rice, Jollof rice , Moin Moin etc. I am sharing one of the items on that was served Nutty Meat Sticks. According to the ladies” this is like one of those Chinese foods we go out to eat, now we can eat it right in Iquo’s house. Plates were wiped out and I can still hear the giggles as the ladies left my place at about 7p.m. As always ladies had ‘take away ‘. Try this for one those party times at home.
Recipe
Ingredient for Nutty Meat on Sticks
2 cups minced Beef
2 cups minced Chicken
4 Beef sausage
2 egg whites
1 tsp Soy sauce
1 bulb Onion
1 1/2table spoons corn flour
1 Sachet ginger/garlic seasoning
1/2 teaspoon dried pepper
Pinch of black pepper and ginger powder
1 Green pepper
1 medium size Tatashe
1 teaspoon toasted Sesame seed or Beni seeds
Ingredient for sauce
1 tbsp brown Sugar
2 tbsp vinegar
1 tbsp Honey
1/2 teaspoon sugar
1/2 cup water
Method
Meat on sticks
1, Mix , 1/2 tbsp corn flour, seasoning, salt, dried pepper, 1 egg white, minced garlic and chopped onion with the minced meats. Do this separately for the beef and chicken
2, Mold the meats into small balls , toss in flour seasoned with black pepper and grated ginger
3, Chop the sausages into bite sizes
4, Place the meat balls and sausages on oiled baking tray ,cover with foil and bake for about 20 minutes
4, Bring out meat , allow to rest for about 15 minutes remove from tray and set aside
5 Chop the green pepper and tartashe into small squares
6, Arrange the meats on skewers with the peppers in between
Method for Sweet and Sour sauce
1, Into the baking tray, with remaining baked meat juice, pour in the the brown sugar, honey, vinegar ,and corn flour and water
2, Whisk to blend properly
3, Place on burner and boil whilst stirring to allow sauce to thicken
4, Drizzle the sauce over the meats and sprinkle the sesame seeds on them
looks easy to make……would definitely try this out
Where can I get beni seeds? Can I make tho without them?
Hi Dfunpen. You may wish to skip the beni seed. But it does add interesting texture to the kebab. You can find it in Shoprite or any Indian store . If you live in the north or middle belt area it is commonly sold in the market.
