Plantain Fritters with Shrimp Sauce

 Plantain Fritters is one meal I love to have when recovering from malaria. That is because the sweetness of the ripe plantain coats my bitter tongue.Last week I had cause to take some medication that required that I avoid taking  fruits until I complete the dosage of the medicine. Please read your medicine labels well or at least ask the pharmacist.  Because the drugs you are taking may react with food. Food and drugs seem to interact quite a bit. 


Now back to my dilemma…… It was one week of torture as I kept on going to my fridge watch the apples and oranges and close the fridge and take a walk. I must have repeated this trip to the fridge severally just for me to establish that I really like taking fruits. But will you blame me? The results are visible on my skin if I do say so myself.
I love paw paw, apples, cherries, pineapple, watermelon really any fruit.
Well today it’s not about fruit, its about Plantain Fritters with Shrimp Sauce.  Some other dishes I love making and they are fast too is plantain pottage. For me every plantain dish is a winner.



Recipe for Plantain Fritters


1 unripe Plantain
One ripe Plantain
1 teaspoon Ginger powder
2 pieces fresh Pepper
Pinch of crayfish seasoning to taste
Salt to taste

Method
1, Peel, wash, cut into small cylindrical shapes and boil the plantain till soft
2, Heat vegetable oil till hot and fry the plantains till light brown. The unripe ones will be crispy on the outside
3, Pound the plantains with ginger, pepper, salt and seasoning till all ingredients are well blended for about 2 minutes
4, Pat the plantain mash into small circles
5, Heat the oil again till very hot . Fry fritters  till golden brown
6, Serve with Shrimp Stew.



How to make Shrimp Stew


1, Blend together 4 pieces medium size Tomato, 4 pieces fresh Pepper, half medium size Onion, 2 bulbs of Garlic
2, Next, boil tomato mix till water dries up
3, Heat 2 tablespoons vegetable oil, fry remaining half of Onion
4, Add the boiled tomato and fry
5, Season the sauce with crayfish seasoning and salt and fry for about 5 minutes
6, Add 1.5 cups fresh dressed Shrimps to the sauce, lower the heat and cook for about 10 minutes. Add Partminger leaves and cook for just 1 minute and the sauce is ready.


Kitchen Tip: In markets in Nigeria partminger is called curry leaves
