Quick Savoury Egg Breakfast

Its Easter Monday and I am up at 4am Nigerian time to write this post. It feels so refreshing and calm to do some writing at this time of the day. The quietness of the morning, no dogs barking ( security alert) thank goodness and there is electricity to work. Makes me look forward to better times in my country Nigeria. There is so much we can get done when there is electricity.

 

The Easter break was restful with me taking plenty naps during the day. But I get suspicious when I start to want to sleep during the day as it could signal malaria fever in the horizon. The slight feverish feeling and little aches on the joint makes me feel uncomfortable and apprehensive of days of taking those horrible drugs and which also disallows eating of fruits ……aaah I will miss my fruits. No mangoes for 3 days? Anyways I will survive.

 

So after the luxury of four days break for the Easter holidays, I am back to the grind tomorrow. I am not so sure I am looking forward to the traffic jams, bus conductors screaming for passengers at bus stops, danfo ( passenger bus) drivers parking on the high way to pick passengers , the cursing by some drivers on the road, motorcyclist ( okada) driving in the wrong traffic direction …the list is endless. But like they say ‘ man must wack’ (a man has got to eat) which is why I have to hit the road tomorrow for work.

 

The one thing I love to do though during the week is have breakfast, but it always has to be quick and my Egg dish today is one of such quick ones. Working in a city like Lagos means that many people go without breakfast for reasons of time constraint.

 

Some two weeks ago whilst trying out some dishes, I made something with Egg that is somewhere between poached and fried. That is why I have not been able to give it a specific name. But the taste was so amazing that I wondered why I do not see this in many restaurants or indeed why I had not thought of it my self before now.  The beauty about this egg dish is the ease of preparation and cooking which takes about 5 minutes.

 

This is one egg dish you can make the night before, keep in the fridge  and serve in the morning or simply make it fresh. So my fellow Lagosians or those living in fast paced cities I here is something for you. No more excuses about no time for breakfast.

Recipe

 

Ingredient

 

1 Egg

 

1 table spoon Olive Oil

 

Black Pepper

 

Little Red Chilli Pepper

 

Pinch Chicken Seasoning

 

Salt to taste

 

Moin Moin cups for cooking the eggs 

Method

 

1. Put some water in a pot to boil. The water in the pot should reach just half way up the cup

 

2. Use Moin Moin cups or any similar container and add  1 teaspoon olive oil, a pinch black pepper, Chilli pepper, pinch seasoning and salt if needed, break in the Egg and sprinkle on a little more black , Chilli pepper and the remaining oil on top of the Egg

 

3. Drop the cups in the water and steam for about 3 minutes .

 

4. Bring out the cup , scoop out the egg and enjoy with bread. You can actually use the olive oil on the bread and leave out butter.
