Savoury Peanut Butter Sandwich

 Savoury Peanut butter  sandwich with vegetables is a nutritious packed  meal that will get you going for most of the day.Breakfast is the most important meal of the day and this we know but time in the mornings is a big challenge. Most of us don’t have the luxury of time to seat and have a nutritious and relaxing  breakfast during the week. Some breakfast items like Peanut butter can be made well in advance . I will recommend that you make your peanut butter, keep in the fridge, so you can prepare breakfast in a jiffy. When you go to the market pick up a bottle of peanuts and the spices needed and get it ground for you in the market and you can store in the fridge for use during the week.

Savoury peanut butter is also used traditionally in Igbo land in Nigeria as a dip for garden eggs. The combination is so tasty. If you are also looking for healthy snaking option you may wish to cut up apples and use the Savoury Peanut Butter as dip.
The crunch of the Chinese lettuce , tomato and peanut butter was such a surprise in terms of taste. I had planned to eat just one slice of bread but ended with two slices. Pair Savoury Peanut Butter Sandwich with freshly squeezed orange juice and you are good to go.

Peanut butter
1slice bread
1 Tomato (sliced)
Lettuce leaves
1 Carrot (grated)

Method
1, Arrange  vegetables on slice of bread and spread peanut butter on it

How to make peanut butter?
Blend into a smooth paste ,1 cup roasted groundnut, 1/4 teaspoon dry pepper, 1 African nut meg( ehuru/ iwun), 1 piece smoked shrimp and a pinch of beef seasoning cube.
You can actually double or triple the ingredients and blend your paste in the market. Tends to be smoother than blending in domestic blender.
