It’s Valentines week . The frenzy of gift purchase is reaching breaking point, red dresses are being seized off hangers as though they were on sale, cards with all manners of lovey dovey words abound. I do not envy those in this business cos they just have to sell by February 14th. Fortunately cards and such similar gifts do not have expiry dates , they will be recycled for the next year.
Whilst there will be many couples heading to one restaurant or the other some others prefer to be home bound. I am sure we can create the right romantic mood even at home, lovely music, nice scented candles or diffusers, well laid table, right lighting and good food and wine to accompany the mood.
My dish today is one that is perfect for the occasion … Not too heavy and not difficult to prepare.
So go ahead fetch your ingredients for the dish right away, look through the method and familiarize your self with it, so you are not just experimenting on Valentines Day
Get that little red dress you have been eyeing, pick up some scented candles, bring out your best crockery, select that favourite music… Teddy Pendergrass, just create the right mood and have fun. *wink * wink
Happy Valentines.
Recipe for making Shredded Beef in Orange Ginger Sauce
Beef ( about 40 strips)
1 teaspoon Orange rind
4 table spoons Orange juice
1table spoon chopped Ginger roots
1 table spoon Corn starch
1/2 small Onion( chopped)
1 cooking spoon vegetable oil
1 large Carrot ( shredded)
Beef seasoning to taste
Dry pepper( optional)
1 Shombo Pepper( cut in strips)
Method
1, Cut the beef into thin strips.
2, Place strips in a bowl and add orange juice and the grated orange rind( back of orange). Allow the beef to stand for bout 30 minute. This helps to tenderize the beef.
3, Mix corn flour with beef seasoning cube.
4, Remove beef from the orange juice and toss in flour mix
5,Heat the oil and fry the onion, ginger, pepper for 2 minutes
6,Increase the heat and fry the beef strips quickly ,turning the beef to ensure even browning of all the strips
7, Add the orange juice and reduce the heat to help the beef cook and thicken the sauce. You may wish to add a little more fresh orange juice if the beef is tough.
8, Correct seasonings and add your carrots last and cook for just I minutes.
9, Serve with boiled white rice.
