I was at one of those girls ‘let’s hang out’ things. You cannot imagine all the lamentation of my friends as each one has tried all sorts of diet regime to get rid of those extra kilograms that were added in the last few weeks.
Drastic weight loss always finds its way back; so I will always advocate for making life style changes rather than fad diets.
Having a healthy breakfast is one way of spreading your calories sensibly throughout the day. When you eat breakfast you get to burn off the calories and you will likely eat smaller portions for the rest of the day.
I have decided to share with you something simple and healthy for breakfast. This is a popular breakfast dish in Nigeria but it doesn’t have to be fried. The idea is to control the amount of oil in your egg.
Besides variety is the spice of healthy eating.
Recipe
Ingredient
2 eggs
1 tomato (chopped)
1 fresh red pepper (chopped)
1 table spoon chopped Onion
1 teaspoon chopped Green pepper
1 tablespoon Olive oil
1/2 pinch of Salt
Pinch Chicken seasoning
Few grains Thyme (optional)
Method
1, Beat the eggs.
2, Add all the other ingredients and mix
3, Pour egg mixture into cellophane bag and tie tightly
4, Drop the bag into boiling water for about 7 minutes. Make sure the water covers the bag well.
5, Serve Omelette with toast for breakfast.
Tip:
– If you are looking to reduce your calories, you may wish to have just this Omelette and some fruits for breakfast.
– To check for freshness of eggs , drop in a bowl of cold water. If it floats it is bad if it sinks it is good.

Please confirm if Cellophane is safe for cooking. Some write-ups says during cooking chemicals from the Cellophane goes into the food.
