When you have over ripe plantain in the house Ukpo Ogede is what to cook.Dodo (fried ripe plantain) is the favourite of many Nigerians, who does not like ripe fried plantain.
But like they say variety is the spice of life. I bring today something that my mum used to make Ukpo Ogede also called Plantain moin moin. I am sure she will be surprised to see the same thing she used to wrap in moin moin leaves turn out so cute from cup cake tins. The beauty about this dish is it’s simplicity. I placed the pudding on a bed of stewed vegetable, Efo Riro which I had in the fridge and saturday dinner was served in just 45 minutes and the 8 pieces of pudding vanished so fast it was unbelievable. Hubby and two of his friends could not wait to be my tasters. They gave their nod so I am confident to share the recipe with you.
Recipe for making Ukpo Ogede
Ingredients
1 ripe plantain
1 cooking spoon ground Tomato/ Pepper mix
1 cooking spoon ground Onion
2 pieces tomatoes( sliced)
1 scotch bonnet Pepper( sliced)
1cooking spoon Palm Oil
10 pieces dried Shrimp ( dressed)
1cube crayfish seasoning
Pinch of ginger powder
1 cup Water
Salt to taste
Method
1, Peel and blend plantain with 1/2 cup water
2,Heat the oil, fry the onion and all the vegetables
3, Add the shrimp , seasoning and salt to taste and fry till sauce cooks and is dry
4,Combine all ingredients and add the remaining water
5 Oil the tins and scoop mixture into tins , wrap the tin with foil paper to allow the pudding cook well
6, Place baking tray in pot of boiling water . Ensure that water only remains at the base of the tin. It should not cover the tin.
7, Pudding is cooked in 25 – 30 minutes
8,Allow the pudding to cool a bit and it will come off the pan easily. Hit the edge of the pan on a tray and the puddings will drop off.
9, Serve with stewed vegetables.

Forgive my ignorance, Aunty IQ, I’m a little confused. I just need a confirmation as to whether the pudding was ‘cooked’ or ‘baked’, it is not very clear to me from the explanation above. Thanks and well done.
Hi,Usang.The pudding in the baking tray is placed in a pot with water and placed on the fire. Thisis just like you will cook Moin Moin.you may wish to wrap in Moin Moin leaves also.

Hi Jaga. Sure you can use the baking tin for Moin Moin. Make sure you oil them well so that when the Moin Moin is cooked and is well cooled it can come off the baking pans easily.
