Minced Meat in Cashew nut Sauce with Mashed Rice

I love holidays particularly if this is shared with family or friends. Well who doesn’t like holidays? This year I was with my sister and my kids and boy was there a lot of laughter and goofiness going around. It was unbelievable. Talk of not taking your self too seriously all the time! I broke all my rules of eating but came out of it with no weight gains… yay! The trick for me was to do some days of no carbs, some days of light food like pepper soup but boy did I walk. One of those days I did up to 11,000 steps which was about 10 times more than what I do on regular days when I am not on holidays. If there is something I enjoy most on holiday it’s the walking.

Today’s meal offer, Minced meat in Cashew nut Sauce with Mashed Rice is inspired by something I had during my holidays. but as always I have adapted this to use everyday ingredients available around you.

For the cashew nut I used the regular bottled one you find in neighborhood stores. You will even find cashew nuts sold in small cellophane bags in traffic.

The rice is the type used for Tuwon, but you can also use Jasmine rice.

Recipe

Ingredients

1 cup Minced Meat

2 tablespoon Cashew paste or butter

1/4 Onion (chopped)

3 cloves Garlic(minced)

2 medium size Carrot(chopped)

1/2 Green pepper(diced)

1/2 Red Bell pepper(diced)

6 tablespoons Beef stock or Water

1/4 teaspoon Black pepper

1 Cooking spoon Vegetable Oil

1 teaspoon dry Pepper

Beef Seasoning to taste

Salt to taste

1/2 cup of Hot Water(for dissolving the cashew nut)

 

Method

1, Mix the minced meat with dry pepper, chopped onion , garlic and seasoning . Ensure the meat is well kneaded to ensure all ingredients are evenly mixed

2, Heat the and fry the meat, stirring well so that the meat does not clump together in one ball. After about 2 minutes add the water or beef stock,lower the heat and cover the meat to cook for about 3 minutes

3, Dissolve the cashew nut paste with hot water and add to the mine sauce and add the vegetables and bring sauce to boil for another 2-3 minutes

4, Taste and correct seasoning and salt and turn off the heat. Serve with the mashed rice.

For the mashed rice simply boil the rice used for tuwon  with salt and chicken seasoning ,until very soft, mash with a spoon and serve hot.
