I was at a party over the weekend and seeing all the regular stuff in Nigeria parties got me thinking of what else can we suggest to these Caterers. The idea of sweet potato balls came up. Well just sweet potatoes I figure would be boring. So I paired the sweet potato with Mackerel fish .
My little nieces and nephews came visiting with their parents as I was experimenting and I got the approval I needed on the final product to share this with you.
You know the way it works if those little tasters turn up their noses you are stuck with your food no matter how much effort you had put into making it.
After the frying,I found the cake was a bit soft so I ended up brushing it with some little oil and baking in the oven for a few minutes and got the nice crisp result I was looking for. No wonder I passed the “taste test” with my little nieces and nephews.
How to make Sweet Potato Fish Cake ? ( makes 4 cakes)
1 medium size Sweet potato
1 medium slice Mackerel fish
1 Egg
1 Scotch Bonnet / Fresh pepper( chopped)
1/4 tsp dry Pepper
1 table spoon chopped Onion
1/2 teaspoon seasoning
1/2 cup Flour
5 leaves of partmenger
Salt to taste
Method
1, Boil potato till soft.
2, Season fish with salt, pepper and a little seasoning and steam till cooked.
3, Peel and mash potato, flake fish.
4, Combine all the ingredients using a fork.
5, Scoop paste onto palm and mold into circular shapes.
6,Dust in flour and fry till brown in lightly oiled frying pan.
7,Remove from frying pan and place on oven rack in preheated oven and bake for about 10 minutes till crisp.
8, Serve with pepper sauce if desired.
This recipe looks yummy, I want to believe any kind of fish can be used because its titus I have available, and I want to try it for my daughter tomorrow. Thanks

Hi,Ann. Partmenger is also known as curry leaves. If you live in Nigeria then the women in the market are familiar with this herb . Ask for it when next you go to the open market. Great in fish
